nana's paella! ;)


not many words for this post ... other than amazing! :)



Paella
1 tbsp - oil
salt & pepper
2 chicken breast - cut into bite size pieces
16 oz - keilbasa or italian sausage - cut into bite size pieces
1 lb shrimp
1 onion - chopped
2-3 garlic cloves - chopped
1 red or green pepper - chopped
2 cups rice
1/2 tsp - cumin
pinch of saffron or tumeric
1 tomato - chop / or substitute 1 can chopped tomatoes
1 can - peas, drained
3-4 cups - chicken stock

preheat oven 400degrees.
heat oil in skillet over medium and brown chicken both sides about 4-5 minutes both sides, set aside. add sausage and brown, about 3 minutes. remove sausage and all but 1tbsp juices. add onion, pepper and garlic and saute until aromatic about 5 minutes. add rice, cumin and saffron/tumeric ... stir to coat about 1 minute. pour into greased 13x9 glass dish. top with chicken, sausage and raw shrimp. arrange tomatoes over meat. carefully pour chicken stock over everything.
bake 25 minutes.
pour peas over top dish and bake an additional 20 minutes or until juices have been soaked up.
