cleanse - day two

day two went pretty well. spirit was a little better and i felt some what more motivated to complete this cleanse. 
i even took my kids to chick fil a and resisted the urge to lick a french fry or sip a sweet tea. i drank my shake and water. blah - but results will pay off, right?

for dinner - i decided on spaghetti squash with homemade tomato sauce.
the spaghetti squash is pretty easy .. cut in half, bake at 400 for about 30-40 minutes. until you can peirce through with a fork. then i shred into 'pasta-like noodles' and saute in a pan with garlic, pepper and a tad of olive oil. easy peasy.

the tomato sauce - i never make it to my complete liking BUT it was tasty.

1 small yellow onion
1 pepper (or in my case - 4 from my garden)
1 tbsp garlic
couple tomatoes (i had about 4 from my garden and 2 from the store)
handful of spinach - chopped
4 baby bella mushrooms - chopped
couple leaves of fresh basil (i used a lot because i love it!)
tomato paste (if you want)

saute the onion, pepper and garlic until onion translucent. 
meanwhile, boil the tomatoes for 1-2 minutes. cool and peel skin. chop cup to your liking.
add to pan with onion/pepper mix. also add spinach, mushrooms and basil. 
cook low for as long as you like. add some tomato paste if you want your sauce thicker.

also with a gluten free, dairy free hamburger bun turned into 'garlic bread'.
it was great!
