swiss steak casserole - 250 calories
cut your 1lb of boneless beef round steak into 3/4in cubes.
in bowl - mix 3tbsp flour, 1 tsp salt, 1 tsp paprike and 1/2 tsp pepper.
add chopped steak and toss to coat.
heat 1tbsp of oil in skillet over med-high heat. add coated beef [reserve leftover flour] and brown on all sides. spoon into ungreased baking dish.
in same skillet - heat remaining 1tbsp of oil. add 2 cups fresh slice mushrooms, 1 cup frozen pearl [i used fresh/chopped] onion and 1 clove finely chopped garlic [i used jar of chopped garlic and 1 clove = 1tbsp] and saute 2-3 minutes or until brown.
spoon over beef in dish. add 4 cups slice carrots, 1 can [14.5oz] stewed tomatoes, undrained and remaining flour and mix well.
cover and bake @ 350 for 1hr 45 minutes or until beef and vegetables are tender.
so! my review - it was DELISH!!!! BUT - it was WAY to similiar to my moms cubed steak receipe which uses a cheaper cut of steak and takes WAY less time! [maybe i'll bless you all with that recipe one day! hehe] but, overall - it was a giant success in the poag household.
